Similar to Dandelion, Chicory is a perennial that is native to Eurasia but grows anywhere dry. The plant as a whole is a very edible plant and is used in salads or added to wine. The flowers can be candied or eaten as is. The roots are often roasted and used as a coffee substitute. The flavor adds a sweet yet bitter addition to most dishes.
Until World War II, chicory root tea was a common drink in Europe and is still a favorite treat for cows and other livestock.
